Cheesecake was alread a popular dish in Ancient Greece (776 BC) before Romans adopted it with the conquest of Greece. The earliest attested mention of a cheesecake is by the Greek physician Aegimus who wrote a book on the art of making cheesecakes.
Variations of cheesecakes emerged after different cheeses has been invented. Different regions, makes different cheeses, thus, produce different cheesecakes.
March 6th in America, is the National Cheesecake day! :)
